White Pepper is the dried berry of Piper Nigrum, a large vine indigenous to India and Africa. Ripening berries are pickled, soaked and rubbed to remove the outer skin. The Berries are then dried and remain white. Add white pepper to light coloured sauces for a mild warm flavour without the colour contrast.
